temps une preuve de la bonté de Dieu envers les
Sommes , que notre F rom en t fouftre les deux extrémités
; fav'oir le chaud & le froid ,* car il croit
aufïi bien en Ecoffe & en Danemarck , quen
Egypte & en Barbarie, L’ufage du F rom en t elt
prefqu’univerfel -, c’eft le plus commun & le meilleur
de tous les grains que nous connoiflons. Ses
meilleures qualités font d’être nouveau, bien mûr,
compacte, pefant, de fe renfler promptement 8c
beaucoup lorfqu’on.le fait macérer dans 1 eau, de
rendre une grande quantité de farine bien blanche ,
de n’être mêlé d’aucune mauvaife graine, & de
n’être point taché ou gâté de rouille.
Perfonne n’ignore l’ufage ordinaire du F rom en t ,
qui fournit une nourriture auffi utile quelle elt
' agréable , car de toutes les elpèces de grains qu on
emploie pour faire du pain, comme le Millet, e
Riz, le Panis ouPanic, l’Epeautre , & plusieurs
autres, il n’y en a aucun qui ait auffi bon goût que
notre pain ordinaire, & qui foit auffi facile a
digérer. G e o jfr . M a t . M é d . ^ Le fon , qui eft l’écorce du Bled ecrafe par la
meule, & que l’on fépare de la farine , eft d’un
ufage familier en médecine , où on le regarde
comme adouciffant , laxatif 8c déterfif. La tanne
de Bled eft émolliente 6c réfolutive y on préparé
avec cette farine une pâte sèche , très-blanche ,
..friable , & qu’on nomme amidon ; elle eft pectorale
, adouciffante & incraffante ; on s en fert a
différens ul'ages.
Obfervation .
On a fait jufqu’à prcfent fins fuccès beaucoup
de recherches fur l’origine du F rom en t ; & de là
on a penfé que , dans l’état où nous voyons cette
Graminée intéreffante , c’étoit une plante alteree
& tout-à-fait changée par la culture. Nous regardons
eêtte opinion comme très-peu fondée , parce
que les altérations que produit la culture ne peuvent
jamais changer les caractères effentiels
d’une plante. En effet, ou ces altérations dénaturent
entièrement les parties de la fructification
en les transformant en d’autres parties , comme
des étamines en'pétales , & des pétales ou des
calices en feuilles ou bien elles augmentent feulement,
par un embonpoint particulier, les dimen*
fions des parties de la plante, fans rien changer
à leurs proportions. Mais nous ne voyons pas que
les altérations.dont il s’agit aient jamais changé
les caractères effentiels d’une plante. Si^ en effet
les organes de la génération ne font point tranf-
formées en des parties incapables de produire le
fruit il n’y a point d’exemple, félon nous, que
ces organes confervant leurs facultés , aient pu
prendre des caraôères qui ne font point ceux de
la plante à laquelle ils appartiennent.
Nous concluons de là que le F rom ent cultive
dont nous traitons , peut être une plante moins
élevéeplus maigre dans fes parties, & à femences
